The Winemakers Dinner experience commences in The Thermal Baths, where you can unwind and allow the stresses of the day to gently dissolve.

The evening then unfolds in our restaurant, Barbara, where a convivial social dining experience awaits. Share an evening of camaraderie with fellow guests as you gather to savor the exquisite wines from San Polo and Poogio al Tesoro in Bolgheri, perfectly paired with five delicious courses from the Hotel Vejlefjord culinary team.

The Winemakers Dinner offers a unique opportunity to meet a esteemed wine connoisseur from the winery, where from the wines originate. The connoisseur will provide insightful presentations of each exceptional wine served throughout the evening.

In the morning, our generous breakfast buffet awaits you in the hotel restaurant. Feel welcome to enjoy a stroll through the grounds after check-out at 10:30 am.

San Polo was founded in 1990, but it was particularly after 2007, that the focus on sustainability, organic viticulture and quality was significantly intensified. The winery is one of the highest-altitude estates in the region - and therefore among the coolest. A modern winery and cellar have been built directly into the hillside on which the estate is located, ensuring natural temperature regulation throughout the year. San Polo  was also only the second winery in the world to achieve CasaClima certification as fully carbon-neutral wine estate.

Over the past decade, the winery has undergone a subtle stylistic evolution. Today, the wines are characterized by clear emphasis on the red-fruit character of the Sangiovese grape and the style have developed in a more elegant and delicate direction, with an almost Burgundian expression. 

San Polo also owns the estate Poggio al Tesoro. Poggio al Tesoro is one of the most renowned wineries in Bolgheri, located along the famous Tuscan coast on the prestigious Soprastrada stretch. Here, focus is firmly on Bordeaux grade varieties, complemented by Syrah and the local Vermentino for the white wines.  The wines embody the essence of great, classic Super Tuscans, crafted from exceptional terroir and refines with meticulous precision in the cellar.
